Payee
Ingredients
- 12 Goat Payee (washed thoroughly)
- 4 Onions Finely sliced
- 1.5 Bulb garlic Crushed
- 2 Tablespoon Ginger Crushed
- 1 teaspoon Turmeric Powder
- 1.5 Tablespoon Red Chili powder
- 1 Tablespoon Coriander Roasted and crushed
- 1 Tablespoon Cumin Roasted and crushed
- 1 teaspoon Whole Cumin
Spices for gauze piece
- 1 teaspon Black Pepper Whole (Peppercorn)
- 2 stick Cinamon
- 5-6 Cloves
- 3 Black Cardamon Large
- 2 Green Cardamon
- 4 Star Spice
- 1 Bay Leave
- 1 Nutmeg

Instructions
- In a large pan Fry onions till they are golden, take them out and blend them in some water

- In the same pan add some more oil and add Ginger garlic paste and cook a little. Add goat paey and fry them for 3 to 4 minutes

- Add blended onions to it

- Cook till the mixture dries up, add red chilies, coriander powder, whole cumin, cumin powder, turmeric and cook a little. Add water so that it covers 3/4th of the pan
- Make a pouch of spices mentioned in the ingredients for "Spices for Gauze Piece" section

- Add to the pan

- Turn the heat on lowest possible level and cover the pan and let it cook for 4 to 5 hours or preferably over night

- When its ready, take out the pouch and garnish with Julian cut ginger and green chilies
