Nihari
Ingredients
- 1 Kg Chicken leg and thigh pieces Bones seperated
- Chicken wings some pieces for stock
Spices for Pouch
- 1 Cinamon Stick
- 2 Black Cardamon
- 2 Green Cardamon
- 5 Cloves
- 3 Star Spices
- 1 teaspoon Peppercorn (Whole black pepper)
- 1 teaspoon Fennel Seeds (Saunf)
- 3 pieces Dry Ginger (Sounth)
- 1 Bay Leave
- 1 Nutmeg
For Gravy
- 3 Onions Medium
- 1.5 Tablespoon Garlic Paste
- 1 Tablespoon Ginger
- 1/2 teaspoon Turmeric
- 1 Tablespoon Coriander Powder Roasted and Ground
- 1 Tablespoon Cumin Roasted and Ground
- 1.5 teaspoon Chili Powder
- 2 Tablespoon Flour Mixed with 1/2 cup of water
- 2 Green Chilies Crushed with 1 teaspoon of cumin
For Garnishing
- Ginger Julian Cut
- Green Chilies
- Lemon Sliced
- Green Coriander

Instructions
- Put bone part and wings of chicken in pressure cooker with enough water, make a pouch with a gauze piece with all spices mentioned in ingredients for "Spices for Pouch" section. Cook fro 15 to 20 minutes under pressure

- When stock is ready, strain the stock

- Fry sliced onions in oil, blend them with water

- Heat some oil and fry ginger, garlic, 2-3 whole red chilies. Add boneless thigh pieces and fry them a little

- Add blended onions to it

- Add all spices mentioned in ingredients "For Gravy" section except flour and green chilies. Fry till the mixture gives off oil

- Add strained chicken stock and some more water if needed

- Turn the heat to lowest possible level.
- Cook for 2 to 3 hours till the meat is tender
- Add flour mixture to it while stirring.


- Add chili and cumin mixture

- Cook little till the gravy thickens according to requirement

- Garnish and serve with hot naan

and do we need to add flour mixture after 2-3 hours ?on what flame ?

Its Nihari, thats why we need to cook it for 2-3 hours on lowest possible flame as already mentioned in the Recipe

What is cumin Mixture in step 12?

It is 2 Green chilies crushed with 1 teaspoon of cumin as mentioned in ingredients for Gravy
