Bombay Chicken

Ingredients
For Marination
- 1/2 kg Chicken Boneless
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Black Pepper Powder
- 2 Green Chillies Crushed
- 3 Tablespoons Lemon Juice
- 2 Tablespoons Flour
Gravy
- 2 Onions (medium) Sliced
- 3 - 4 Tomatoes Chopped
- 3/4 Cup Yogurt
- 1 Tablespoon garlic Crushed
- 1 Teaspoon Ginger Crushed
- 3 Whole Red Chillies (large) Dried
- 2 Bay Leaves
- 2 Star Spice
- 4 - 5 Pepper Corn
- 2 Cloves
- 5 - 6 Curry Leaves
- 1 Teaspoon Cumin Seeds
- 3 - 4 Tablespoons Tomao Purree
- 2 - 3 Tablespoons Cream
- 2 Tablespoon Lemon Juice
Spices for Gravy
- 1 Teaspoon Chilli Flakes
- 1 Teaspoon Red Chilli
- 1 Teaspoon Cumin Roasted and Ground
- 1 Teaspoon Corriander Roasted and Ground
- 1 Teaspoon Paprika Powder
- 1 Chicken Cube Or 1 Tablespoon Chicken Powder
- Salt To Taste
Toppings
- 1 Green Chilli Finely Cut
- 2 Tablespoon Fresh Coriander leaves
- 1 Tablespoon Ginger Julian Cut

Instructions
- Marinate the chicken using the rest of the ingredients mentioned in the marination section. Leave it for marination for 15 - 20 minutes at least

- Shallow fry the chicken on medium high heat. Each side will take 1 - 2 minutes


- Fry the onions in oil till they turn golden. Add tomatoes, Cook till soft

- Blend these with yogurt

- In some oil, fry star spice, ginger garlic paste, curry leaves, bay leaves, cloves, pepper corn and whole red chillies. Fry a little

- Add the blended gravy to it

- Cook till it thicken and is about to give off oil. At this stage add all the spices mentioned in the Spices Section and cook till it gives off oil

- Add tomato purree and mix

- Then add cream so that mixture is smooth

- Add fried chicken to it and adjust spices accordingly.

- Cook till all the flavors are merged well and it gives off oil

- Serve hot with toppings
