Samosay, Rolls and Pappri
We bring you this authentic recipe for making samosa/roll patti at home! No worries about bad quality stuff that is sold in the market when absolutely everything is homemade.
You can have these yummy samosay and rolls with Imli ki Chutney or Podina Chutney. Its the perfect combination 🙂
Ingredients
For Filling
- 1/2 kg Chicken Minced
- 1 Tablespoon Chilli Flakes
- 1 Tablespoon Soy Sauce
- 1/2 Teaspoon Black Pepper
- Salt To Taste
- 1 Onion Finely Chopped
- 2 Green Chillies Finely Chopped
- 1 Teaspoon Cumin Seeds Roasted and Ground
- 1 Teaspoon Coriander Seeds Roasted and Ground
- 1 Tablespoon Flour
- 1 - 2 Tablespoon Yogurt

Instructions
- Add all the ingredients of filling section in a pan except flour and onion.

- And cook until all the moisture is almost dried up

- At this point add onion and flour. Cook till it dries

- Mix the salt in Flour and knead it using water adding little by little until a stiff and smooth dough is formed

- Let the dough rest for 20 - 30 minutes
- Make equal dough balls of your desired size to make paatis

- Without using any flour, roll out 3 of the balls into equal sized circles. You can use oil for rolling if its difficult for you

- Spread oil on one of the rolled out circle and place the other one on top of it. Make sure that the edges meet and they're both aligned. Again, apply oil on the top and stack the third circle on the top

- Tap the edges with your fingers and so that the edges are joined

- Roll out this stack as thin as you can easily

- Heat your skillet and lower the heat. Place the rolled out stack on the skillet and slightly cook both sides (a minute approximately)

- This is how it should look

- Peel off each circle from the stack carefully


- Cut off the thicker parts from the edges. Do not discard them since they'll be used to make Papri

- Repeat this process until all the dough has been used. You can use these to make rolls or samosas

- To stick the pattis in your desired shape, form a thick gravy using flour and water.
- Follow the pictures to make rolls



- To make samosas, follow the images






- Heat the oil and fry them on medium heat until they turn golden

- The edges we saved up while making pattis can be fried to make this delicious Pappri 🙂

- You can either eat it with the chutnneys or you can sprinkle them on top of chaat or Dahi bhallay





Recipe Notes
Note:
For storage purposes, you can either fry them whole and then freeze them. At the time of serving, heat them up in the oven.
or
fry them partially. i.e. Fry them for only a minute and freeze them. At the time of serving fry them all the way till they are golden.
