Khattay Aalo
Ingredients
For Spices
- 15-20 Red Chilies large
- 2 Tablespoon Coriander (Whole)
- 2 Tablespoon Cumin (Whole)
- 2 Tablespoon Cumin Roasted and grinder
- 1 Tablespoon Turmeric
- 1 Bay Leaves
- 10-15 Fresh Green Curry Leaves
- 1 teaspoon Black Pepper Ground
- 1 Tablespoon Sugar
- 3 Tablespoon Lemon Juice
- 1 teaspoon Black Salt
- Salt as required
For Garnishing
- Coriander Leaves Finely chopped
- Mint Leaves Finely chopped
For Tamarind paste (Imli Paste)
- 100 gm Tamarind (Imli)

Instructions
- Boil potatoes till soft and peel them

- Cut them into pieces of size as you desire
- Prepare Tamarind paste (Imli) by boiling tamarind in 1 cup of water till soft, strain well using 1 Cup of water so that you get two cups of tamarind paste

- Chop onions, garlic and ginger together


- Roast red chilies, coriander and cumin of quantities mentioned in ingredients "For Spices" section on a pan or tawa and grind them with black salt till fine.

- In a pan heat oil add bay leaves and curry leaves to it and then add chopped onions mixture

- Fry till golden and add the grinded spices

- Fry spices a little and add half cup of water and potatoes

- Mix potatoes with spices add some more water if required and fry a little
- Add Tamarind (Imli) paste

- Add lemon juice, sugar and salt

- Cook over low heat till potato absorb the gravy and the mixture is almost dry and it gives off oil

- Add black pepper and roasted and ground cumin powder. Also add coriander and mint leaves

- Serve with boiled Rice
