Prepare Tamarind paste (Imli) by boiling tamarind in 1 cup of water till soft, strain well using 1 Cup of water so that you get two cups of tamarind paste
Chop onions, garlic and ginger together
Roast red chilies, coriander and cumin of quantities mentioned in ingredients “For Spices” section on a pan or tawa and grind them with black salt till fine.
In a pan heat oil add bay leaves and curry leaves to it and then add chopped onions mixture
Fry till golden and add the grinded spices
Fry spices a little and add half cup of water and potatoes
Mix potatoes with spices add some more water if required and fry a little
Add Tamarind (Imli) paste
Add lemon juice, sugar and salt
Cook over low heat till potato absorb the gravy and the mixture is almost dry and it gives off oil
Add black pepper and roasted and ground cumin powder. Also add coriander and mint leaves
