Drumstick Kachoori
This is a snack from Nano’s childhood. She still remembers eating these with her siblings. So, today we’re reviving the past by bringing you the recipe of drumstick kachoories, with a touch of modern flavor. A yummy drumstick, all wrapped up between the crunchy layers is all you need to go on an ecstatic journey of flavors! That’s the power of a desi dish right there 🙂
Ingredients
For Dough
- 1-1/2 Cup Flour All purpose
- 1/2 teaspoon Salt
- Water as required
- 70 gm Butter
- 3 Tablespoon Corn Flour
For Drumsticks
- 6 Chicken leg pieces
- 1 Tablespoon Chili flakes
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Worcestershire Sauce
- 1/2 teaspoon Black Pepper
- 2 Green Chilies Chopped
- 1 Onion Finely Chopped
- Salt if required
- 1 Tablespoon Flour

Instructions
- Add 1/2 teaspoon salt to flour and knead it very well into a stiff and smooth dough

- Cover the dough and refrigerate it for half an hour while you prepare the drumsticks
- Warm butter in microwave for few seconds so that it softens
- Beat the butter and add 1 tablespoon corn flour and beat again till all of it is mixed well then add remaining corn flour while beating till you get a fluffy mixture and all the cornflour is merged well into the butter. Refrigerate it also so that it become stiff

- When dough is settled, divide it into approximately 6 equal portions, roll out each portion

- Apply butter mixture on the rolled portion and fold it into a small square applying butter mixture to each fold



- Cover the folded portions and refrigerate them for some time so that the layers are settled down
For Drumsticks
- Pull the flesh part of leg pieces by detaching from the base as shown in pictures



- Marinate drumsticks in all spices except flour and onions mentioned in ingredients "For Drumsticks" section for 30 minutes

- Cook these drumsticks covered till the water dries, adjust the spices according to your taste. Add onions and then flour, cook a little more till the mixture is dried well. Allow it to cool

Making Kachoori
- Roll out a portion into a rectangular shape, thin out the edges with your fingers

- Take out a drumstick and mash it a little with your hand. Place it on one end of the rolled dough

- Enclose the drumstick with rest of dough and merge the edges very well and shape them into kachoori with your hands just like you make a paratha. See the pictures for details


- In the same way prepare all the Kachoori

- Heat the oil, test it weather it is read by adding small piece of dough, if it pops up the oil is ready. At this stage lower down the heat and place kachooris in the oil

- Continue cooking at low heat till one side is golden, flip the kachooris till both sides are done

- You can also bake these kachoories, grease the baking tray very well with butter, place the kachoories on it, then brush them with butter well or you can brush them with egg beaten with one tablespoon of milk

- Serve hot with desired sauce


- Oven cooked
