Chappal Kebab
Ingredients
Ingredients for Kebab
- 700 gms Chicken/Beef Minced
- 50 gms Butter
- 1 Onion Large
- 3 Green Chillies
- 3 Tablespoons Coriander (hara dhania)
- 1 Tablespoon garlic Crushed
- 1 Tablespoon Ginger Crushed
- 3 Spring Onions Small bulbs with green part very small
- 12 - 15 Red chillies Whole or 1-1/2 Tablespoon Crushed Chillies
- 1-1/2 Tablespoon Cumin Seeds
- 1-1/2 Tablespoons Coriander Seeds
- 1/2 Teaspoon Carom Seeds (Ajwain)
- 1 Teaspoon Chinese Salt
- 1 Teaspoon Salt Adjust according to your taste
- 2 Tablespoons Cornmeal (Makai Aata)
- 2 Tablespoons Wheat Flour
- 2 Tablespoons Corn Flour
- 2+1 Tomatoes 2 Finely chopped, 1 Sliced
- 2 Tablespoons Anaar Dana Dried Pomegranate
- 2 Eggs
Ingredients for Chappli Sauce
- 1 cup Yogurt
- 1 Tablespoon Vinegar
- 2 Tablespoons Tamarind Sauce (Imli Sauce)
- 3 Green Chillies
- 3 Tablespoons Mint Leaves
- 2 Tablespoons Coriander Leaves
- 1/2 Teaspoon Salt
- 1 Tablespoon Butter
- 1 Tablespoon Flour
- 2 Cloves garlic Finely chopped or grated
Servings: People
Instructions
- In a pan slightly roast cumin, carom and coriander seeds and red chillies
- Cool and grind all spices coarsely
- Chop onions, green chilies, garlic, ginger, coriander leaves, spring onions. If you are using Beef then chop it as well
- In a big bowl, mix all ground spices and chopped material with minced meat
- Ad corn meal, wheat flour, corn flour, eggs, two chopped tomatoes, Annar Dana and butter
- Mix well and let it stay for 10-15 minutes
- Heat your grill Pan, grease well with butter or oil
- Take a portion of mixture, place it on grill and by slightly pressing it give it an oval shape. Your Kebab should be thick enough
- Embed a tomato ring in the middle
- Cook at medium heat till the lower side is cooked
- Drizzle some oil or butter on the upper side of the kebab and flip it
- Let this side cook as well. Don't over cook the kebab, each side will take hardly two minutes to cook in case of chicken
- Flip the kebab again and if your tomato is damaged, place another fresh one in the same cavity
- Serve Hot with Chapli Sauce. (The recipe of sauce is given below, please scroll down further)
Chapli Sauce
- Blend all ingredients given in Chapli sauce section except for Butter, garlic and flour
- Heat one tablespoon butter in pan and add grated garlic and flour
- Add blending mixture to the pan and cook till it is thick. Adjust salt accordingly

Hi i tried this recipe today , but when i made big chappal kababs they start breaking when side change, i followd exct same recipe

That’s strange. There’s good enough quantity of egg, cornflour and wheat flour which don’t let the kebabs break. Are you sure you followed the recipe? Did you strain the mined meat well?

The only thing’s that gotten me confused is when are we supposed to add flour for the sauce, I guess you forgot to add that part. Also, you mean ‘maida’ when u say flour, right?

Method of making Sauce is given separately at the end. By flour we mean “Maida” and you will have to Heat one tablespoon butter in pan and add grated garlic and flour separately from other ingredients as mentioned in “Chapli Sauce” section. Hope it clears the confusion.
