This traditional dish from France have been requested by many users. It became famous among the masses after the famous movie "Ratatouille" was released. We had a lot of fun making it. For those people who are not very fond of vegetables should definitely give it a try. And look how beautiful it looks!

Ingredients
Seasonal Vegitables
- 3 Zucchinis (Maroo)
- 3 Egg Plants (bengan)
- 3 Potatoes
- 3 Apple Gourds (Tinday)
- 3 Long Green Capsicum (Shimla Mirch)
- 3 Tomatoes
For Sauce
- 6 Large Tomatoes
- 1 Onion
- 1 Garlic Bulb
- 3 Large Green Chillies
- basil leaves
- 2 Tablespoons Tamarind Paste
- 1 Teaspoon Peprika
- Salt To taste
- 1 Teaspoon Chinese Salt
- 1 Teaspoon Black Pepper
- 1 Tablespoon Hot Sauce/Chili Sauce
- 1 Teaspoon garlic Crushed
- 1 Teaspoon Ginger Crushed
For Topping
- 2 Tablespoons olive oil
- 2 Cloves garlic
- 1 Teaspoon Thyme
- 1 Teaspoon Salt
- 1 Teaspoon Black Pepper

Instructions
- Place 6 tomatoes, 3 large green chilies garlic and onion on baking tray and bake in oven over highest heat for 20 - 25 minutes. Preferably, keep only upper burner on

- Once baked, peel them off and blend in a blender. Also add basil leaves while blending.

- Strain this sauce

- In a pan, heat 2 tablespoons olive oil, fry 1 teaspoon chopped garlic + 1 teaspoon chopped ginger

- Add strained sauce

- Add salt, Chinese Salt, Paprika, Hot sauce, tamarind paste, and black pepper. (Adjust spices according to your taste). Cook till sauce is thick.
- Cut all vegetables in thin round shape



- Pour the sauce in the serving dish

- Arrange vegetables in the dish, as can be seen in the image, Switching from one vegetable to the next alternatively.


- Prepare topping by mixing the ingredients mentioned in the "For topping" section above.

- Drizzle the topping on top of the arranged vegetables

- Bake at high temperature (220 degrees C) for Approximately 50 minutes or till they are done.
