Stuffed Deep Dish Pizza
Ingredients
For Dough
- 6 Cups All Purpose flour
- 4 teaspoon Yeast
- 1/2 teaspoon Salt or Pinch
- 1-1/2 teaspoon Sugar
- 1/2 teaspoon Oregano
- 2 Cups Milk
- 8 Tablespoon Butter
- Warm Water if required
For Chicken Tikka Filling
- 750 gm Boneless Chicken
- 2 Tablespoon Chicken Tikka Masala
- 1/2 teaspoon Salt
- 2 Tablespoon Lemon Juice
- 1 Tablespoon Ginger Garlic Paste 1 TBS each
- 2-3 Tablespoons Oil
- 1 Green Chili Chopped
For Filling
- 100 gm Shredded Cheddar Cheese Adjust the qty as desired
- 200 gm Shredded Mozrella Cheese Adjust the qty as desired
- Olives As desired
- 1 Capsicum (Chopped)
- 1 Small Onion (chopped) if desired
- Oregano For sprinkling
- 2 teaspoon Parmesan cheese
Ingredients for Sauce
- 7-8 Tomatoes
- 2 Onions (Medium)
- 1 Potato Cut in small pieaces
- 7-8 Garlic Cloves
- Salt to taste
- 1 teaspoon Chinese Salt
- 1 Chicken Cube
- 2 Tablespoon Soy Sauce
- 1 Tablespoon Worcestershire Sauce
- Vinegar Preferably brown
- 1 Tablespoon Chili Sauce
- 1 teaspoon Crush Chili
- 1-2 Tablespoon Oil
- Red Food Color a bit

Instructions
Preparing the chicken
- Marinate chicken for half an hour in above mentioned spices

- In a pan cook the chicken till all water dries over high flame.

Preparing the Sauce:
- For making the sauce, heat oil, add onions+garlic and let them saute. Add potatoes, chopped tomatoes and let it cook for a few minutes

- Now blend this mixture well with some water and strain it well. Discard the left over

- Return mixture to pan. Add all spices and sauces except salt and cook it till it becomes thick.

- Adjust salt accordingly and add red color

Preparing the Dough:
- Warm up the milk to a luke warm temperature and dissolve yeast in it. Add sugar and butter and beat it well

- Add 2 cups of flour one at a time and beat. Then add the rest of the flour with salt and knead it well. Add warm water if required

- Oil the surface of the dough and cover it with damp cloth Let it rest till its risen in a relatively warmer place.

Assembling of the Pizza:
- Butter the pan well. If you have deep dish pizza tray then take out 1/4th of dough.
- Roll out the rest of the dough in to a circle of a 4” more than the original pan size, all around
- Roll out small portion into circle equal to the size of your pan
- Set the big dough circle in the pan.

- Add the cooked chicken, and the rest of the filling ingredients

- Sprinkle some Oregano

- Cover all this with the smaller roll

- Now merge both ends of the upper and lower dough so that it is enclosed completely


- Spread the Sauce all over and Sprinkle Oregano and Parmesan Cheese. If you dont have Parmesan cheese sprinkle some dry milk

- Bake for 35 minutes at 180 degree C in electric oven. Adjust heat according to your oven 🙂


Alternate Method:
- If you dont have any deep dish pan then here is another method:
- Butter the pan well. Divide roll into 5 portions, 2 for base, 1 for top, and 2 for making wall

- Roll out 2 parts to make base of pizza, roll out one part for top
- Roll out other two parts into long strips approximately 4” wide.

- Fill it with chicken and cheese filling or Kabas or you can fil it with sausages

- Place filling in center and enclose it carefully to give it a ring shape

- Now, place the base and add all the filling material and cooked chicken on top of it.


- Then place the second covering on top and place the rings around so that the joints face bottom

- Working with hands,merge them well and give ring a wall shape around. Butter these walls.

- Now make cuts in upper crust and spread sauce. Sprinkle cheese, Oregano, dry milk and bake it

If you are planing to buy an electric oven then spend good money one time and buy one of those electric ovens that can be installed in cabinet. The one we are using is of “Rays” company.

You have used yeast in my baking dishes.Is the yeast instant or regular?
