Rooh Afza (From Scratch)
Iftari without having Roh Afzah isnt Iftari. Today we bring you this precious recipe to teach you how to make Roh Afzah from scratch. No preservatives, no emulsifiers and it gives a very cool feeling.
Prepare it beforehand folks 🙂
Ingredients
- 50 gm Goond Qateera (Tragacanth Gum)
- 2 Kg Sugar
- 1 to 2 teaspoon Afza Essence (QTY is dependant on quality of essence)
- Red Food Color as desired

Instructions
- Take a big pan and Soak Goond Kateera (Tragacanth Gum) in 5 to 6 Liters of Water for approximately 18 to 20 Hours

- After it is soaked, the mixture turns into soft gel

- Put the pan on stove on lowest possible heat. Cover the pan with lid 1/4th open so that gum do not ooze out when it boils

- Cook on lowest possible heat for 4 to 5 hours till whole gel is dissolved into a smooth syrup. TIP: ( If you are in hurry then blend the gel before cooking so that cooking time is reduced)

- Strain the gel so that the impurities of gel are filtered out

- Place the gel syrup back to heat, add sugar and cook till it is dissolved and the syrup is according to your desired consistency (it should be quiet thick)

- NOTE: Now the syrup is ready you can give it any color and flavor, e.g if you want banana flavor then give it green color, 1 teaspoons citric acid and add banana essence or if you want pineapple flavor then add yellow color, 1 teaspoon citric acid and pineapple essence and so on. We would be preparing few flavors for you.

- Add Red food color so that the syrup gets the color you desire and cook little more

- Remove from heat and add Afza Essence, add little by little. Keep on testing till it is according to your desired taste

- To avoid adding preservative, you can freeze the syrup in tray and then cut in cubes and transfer them in plastic bags. You can also keep it in some Jar and refrigerate it.

- You can just have it by adding it in cold water or shake the frozen cube with lemon juice and water in blender
