Instant Achaar
Ingredients
- 1 kg Mangoes Unripe (Kachay aam)
- 2 Bulbs garlic Crushed well
- 25 Whole Dry Red Chillies
- 2 Tablespoon Cumin
- 2 Tablespoon Fenugreek seeds Methray
- 2 Tablespoon Nigella Seeds Kalonji
- 1 Tablespoon Mustard Seeds Rye
- 2 Tablespoon Coriander
- 3 Tablespoons Fennel Seeds Sonf
- 2 Tablespoons Red Chilli Powder
- 1.5 Tablespoon Salt
- 1 Tablespoon Turmeric Haldi
- 1 Tablespoon Sugar Preferably Brown
- 1 Cup Lemon Juice
- 8 - 10 Curry Leaves
- 1.5 - 2 Cups Mustard Oil Sarsson

Instructions
- Peel the mangoes and slice them as desired. Discard the seeds of mangoes

- In a pan, slightly roast cumin, coriander, fennel seeds, whole red chilies,
- Coarsely grind the roasted spices along with the rest of the spices except mustard seeds

- Heat the oil well

- Add curry leaves and mustard seeds to the oil

- Add mangoes and fry a little

- Add all the spices

- Along with garlic

- Add sugar

- In the end add lemon juice

- Mix well and cook a little (Approximately 1 minute)

- Your Instant Achaar is ready! 🙂


- Store it in an air tight container and refrigerate
