Butternut Squash Salad
Ingredients
- 700 gms Yogurt Unsweetend. You can adjust the quantity as desired
- 2 Butternut Squashes (Kadu)
- 1 Onion Finely Chopped
- 1 Tomato Finely Chopped
- 1/3 Cup Spring Onions Finely Chopped
- 1 Green Chili Finely Chopped
- 1 Cucumber Finely Chopped
- 3 Tablespoons Fresh Coriander leaves Finely Chopped
- 1 Tablespoon Fresh mint leaves Finely Chopped
- 1/2 Teaspoon Crushed Red Chilies Adjust accordingly
- 1/2 Teaspoon Black Pepper Adjust accordingly
- 1/2 Teaspoon Chaat Masala Adjust accordingly
- To Taste Salt
- 1/2 Teaspoon Thyme Adjust accordingly

Instructions
- Peel off the butternut squashes

- Grate both of them

- Put them on medium heat. No need to add any water, they will release moisture once heated

- Add in the red chilli flakes and thyme and mix them well. Take it off of heat as soon as the water dries up

- To get rid of the strong taste of onions, wash them with salt


- Prepare your vegetables

- Blend the yogurt and mix in the salt, pepper and chaat masala

- Add the vegetables

- Mix them and the raita is ready
