Mulligatawny Soup

Ingredients
- 1 Cup Dall Mong/Yellow Lentil (Pigeon Peas Lentil)
- 3 Tablespoon Rice
- 3-4 Chicken Pieces (Do not use neck parts)
- 1 Onion (Chopped)
- 5-6 Cloves garlic
- 1 Zucchini(Maro Kadu/Chinese Kadu) (Chopped)
- 8-10 Curry Leaves
- 2 Tablespoon Tamarind Sauce (Thick)
- 1/2 teaspoon Turmeric
- 1 teaspoon Salt
- 1 Chicken Cube
- Chinese Salt as desired
- 1 teaspoon Red Chili powder
- 2 Tablespoons Oil
- 1 Tablespoon Roasted Coriander Powder
- 1 Tablespoon Roasted Cumin Powder
- Pinch Yellow Food color
- 1-2 Green Chili
- 2-3 Cup Water
- 1 Cup Coconut Water or 1/2 cup shredded coconut and 1 cup water
Whole Spices wrapped in a Gauze/Muslin Piece
- 8-10 Black Pepper
- 1 Cinnamon Stick
- 2 Large Cardamon
- 2 Cloves
- 1 Bay Leave Large
- 2 Star Anise (Badian khatai)
- 1 piece Ginger

Instructions
- An easy hack to make the coconut water is by adding a cup of boiling water into 1/2 cup shredded coconut. Then blend it in blender for 2 - 3 minutes. Strain it very well. Discard the residue and use the coconut water
- In a cooker or normal pan, heat the oil.
- Saute onions, and garlic in it. Add curry leaves, coriander+cumin powder.

- Add lentil, rice, zucchini, chicken pieces, green chilies and water



- Make pouch of whole spices and put it in

- Let it cook till chicken and lentil are tender. Preferably cook in pressure cooker for 10 minutes so that you get rich broth of chicken also as can be seen in the photos

- Now carefully remove the pouch and chicken pieces from the lentil.

- Give them water wash and add this water to the lentil mixture
- Make sure no bone is left in lentil. If some meat is left in the mixture, that’s okay.
- Now blend lentil mixture well
- Strain the mixture well. Add water if needed and discard the left over

- Return this strained lentil mixture to the pan
- Add rest of the spices, chicken cube, coconut water, tamarind/Imli paste

- Cook it till it achieves the required consistency and adjust spices according to your taste Add some yellow color

- Serve it with boiled rice. You can also serve the chicken pieces that were taken out with the soup
