Molten Lava Cake

This recipe was requested by many members. I'm giving exact recipe however this is a very tricky one as far as baking time is concerned. You'll have to find the exact baking time for your oven by testing 1 - 2 cakes. By this you will find out exact baking time of your oven at which outer structure of the cake will be baked and inside will be molten. Baking time varies, depending on the size of the ramekin, and its material also. Even by a minute's difference, the cake can be baked whole so this is the tricky part. The cake, molten or whole will taste delightful so no worries there 🙂 As a solution, I'm also giving an alternate recipe.

Ingredients
Servings: People
Instructions
  1. Microwave chocolate chip and butter for 30 seconds - 1 minute, till they are melted well.
  2. Mix it well. Allow it to cool
  3. In a bowl, beat egg whites till they are stiff
  4. In a separate bowl, beat egg yolks, vanilla essence and sugar well till its color becomes light.
  5. Add flour and beat well
  6. Add chocolate mixture and beat again
  7. Add beaten egg Whites to the mixture and mix well
  8. Butter your ramekins generously and dust them with sugar/flour/Coco Powder
  9. Pour batter in ramekins. Fill 3/4 of them
  10. Bake for 12 minutes at 220 degree C. This is the ideal time. You can test by baking one ramekin first. You can also bake it in muffins molds but in that case baking time will be reduced to 7 - 8 minutes.
  11. Pass a clean knife through edges so that cake is released easily.
  12. Invert a plate on ramekin and flip it over. Tap the ramekin so that the cake is released. Serve with Ice cream
Alternate Method
  1. Take some cooking chocolate and melt it in microwave with a tablespoon of butter and let it cool down a little.
  2. Add cream and mix it well. Adjust the quantity of cream and chocolate according to your desire
  3. Take a chocolate cup cake (recipe will be posted later). Cut a small slice off of the top
  4. Make some space inside the cupcake by pressing the cake from middle towards the edges so that enough space is created
  5. Pour the chocolate+cream material in it.
  6. Place the cake piece back. You can pour some chocolate over
  7. Microwave it right before serving for about 30 seconds - 1 minute till all chocolate is melted inside. Serve with ice cream
