Fried Rice
Ingredients
For Boiling Rice
- 1/2 Kg Rice Superior Sela Basmati/ Parboil
- 3 Tablespoon Lemon Juice
- 1 Tablespoon Salt
For Vegetables
- 1 Cup Chicken Finely chopped boneless
- 1/4 Cup Peas
- 1/2 Cup Spring Onions Finely Chopped
- 1/2 Cup Carrots Finely Chopped
- 1 teaspoon garlic Finely chopped
- 1/2 teaspoon Ginger Paste
- 1 Capsicum Finely Chopped
- 3 Green Chilies Finely Chopped
Egg Mixture
- 3 Eggs Beaten with 1 teaspoon chinese salt and little yellow color
- 1 Teaspoon Chinese Salt
- 1 Pinch Yellow Food color
- 2 Tablespoons Oil
Mixture for seasoning
- 1/3 Cup Water
- 2 Tablespoon Soy Sauce
- 2 Chicken Cubes
- 2 Tablespoon Lemon Juice
- 1 teaspoon Chinese Salt
- 1/2 teaspoon Brown Sugar

Instructions
Preparing Rice
- Soak the rice in enough water for at least 2 hours
- Boil water in a big pan. Add 1 Tablespoon salt and the soaked rice to it

- When they are almost done, add lemon juice
- Strain the rice
Preparing Egg Mixture
- Beat eggs with yellow color and Chinese salt

- Heat 2 Tablespoons oil in a pan and fry the eggs.

- Mash them until they are turned into small pieces

Preparing Seasoning Mixture
- Microwave 1/2 cup of water with 2 Chicken cubes so that they are dissolved well

- Add the rest of the ingredients from this section
Assembling the Rice
- In the pan (In which you boiled rice) heat 2 Tablespoons oil, add garlic, giner and chicken. Fry them till they are cooked

- Add all vegetables and cook a little


- Add rice to it

- Pour seasoning mixture and mix it carefully over medium heat for 1 - 2 minutes

- Add the prepared eggs and mix
