Strawberry Cheese Cake

The strawberry season is about to leaves us, and what better way to savor the sweet-sour flavor of strawberries than to make a Strawberry Cheese Cake! It can not get any better than this 🙂

Ingredients
For Base
Strawberry Topping
For Cream Cheese (if not available) Otherwise take 650 gms of Cream Cheese
For Sour Cream (Or take 450 gms of ready made sour cream)

Instructions
Preparing Base
  1. Mix butter, ground almonds, cinnamon, nutmeg, biscuits (gram crackers), together well.
  2. You need a base removable baking pan. Set the mixture on the base and spread it a little over the walls as well. Keep it in refrigerator while preparing other things.
Preparing Strawberry Sauce
  1. Take strawberries, sugar and lemon juice in a pan
  2. Cook over low heat till the strawberries release water
  3. Then cook till the desired consistency is achieved. Let it cool and put this in the refrigerator as well.
Preparing Cream Cheese
  1. If ready made cream cheese is not available, then take 700 ml of cream and heat it well in a pan or microwave. Now add yogurt to it
  2. Cover it and place it in a warm place for 3 - 4 hours. Then strain it in a muslin cloth and hang it preferable overnight. If you have ready made Cream Cheese available, then take 650 gms.
Preparing Sour Cream (If not ready made available)
  1. Take 500 ml of cream and add 2 Tablespoon of vinegar and let it sit for 10 - 15 minutes. If you have ready made Sour cream available, use 450 gms.
Preparing Cake Batter
  1. Take cream cheese in a bowl and beat it well with sugar
  2. Add sour cream and beat
  3. Add eggs one by one and beat and at the end add flour, lemon juice vanilla essence. Beat it well
  4. Take out the prepared base from the refrigerator. Pour the prepared batter on the base
  5. Bake for 50 minutes at 160 dDegree C or till the testing skewer comes out clean
  6. Once baked, allow the cake to cool down. Open the pan and take the cake out. Spread the strawberries sauce on top. Your cake is ready 🙂

Note: This material is for 11 inches diameter pan. You can adjust quantity according to the size of your pan.
