Hunter Beef
Ingredients
For Marination
- 2 kg Beef 1 Piece
- 4 Tablespoons Saltpetre (potassium nitrate) Kalmi Shora
- 3 Teaspoons Salt
- 2 Tablespoon Pepper Corn Whole Kali Mirch
- 1 Stick Cinamon
- 2 Cloves
- 2 Large Cardamom
- 1 Nutmeg
- 2 Tablespoon Red Chilli Powder
- 1/2+1/2 Cup Lemon Juice
For Cleaning and Washing Meat
- 3 Tablespoon Baking Soda
- 1/4 Cup Vinegar
- 2 Cups Water

Instructions
- Mix Baking Soda in vinegar and water. Soak the piece of beef in it for an hour

- Wash thoroughly and strain it.
- Grind all the whole spices Pepper Corn, Large Cardamom, Cinnamon, Cloves, Nutmeg
- Prick the beef with a knife. Add half of the spices including kalmi shora, salt and red chilli and 1/4th Cup of lemon juice and continue pricking so that the spices go inside the meat


- Turn over the side and apply rest of spices and 1/4th cup of lemon juice
- Place this marinated beef in the refrigerator and let it marinate for at least 24 - 36 hours. With regular intervals prick the meat and add lemon juice on each side. Repeat this 2 - 3 times while the meat is marinating. This step is necessary so that the spices go inside the meat

- Once the beef is marinated, put it in a large pan with 2 cups of water and cook it over very low heat for one hour. Cover the lid.

- Flip the side and continue cooking till the beef is tender. If there is water left at this stage then cook till all water dries up.



Recipe Notes
The average cooking time for Hunter beef is almost 3 hours. However if you have a big cooker, you can reduce the cooking time by cooking it in pressure.
