Chicken Cashew
Ingredients
For Marination
- 1/2 Kg Chicken Cut in small cubes or desired shape & size
- 1 teaspoon Chinese Salt
- 1 Tablespoon Wine Vinegar or normal vinegar
- 1 Tablespoon Soy Sauce
- 1 teaspoon Garlic Paste
- 1/2 teaspoon Ginger Paste
- 1 teaspoon Sesame Oil
- 1 Tablespoon Corn Flour
- 1 Teaspoon Chilli Sauce
For Vegetables
- 1 Capsicum Cut in cubes
- 2 Green Onion Chopped
- 1 Onion Small and cut in cubes
- 2 Green Chilies Splited and cut in square
- 20-30 Cashew Nuts Or as desired
For Gravy
- 1 teaspoon garlic Chopped
- 1/2 teaspoon Ginger Chopped
- 1 teaspoon Sesame Oil
- 1 Chicken Cube or 1/2 cup chicken stock
- 1 Tablespoon Soy Sauce
- 1 teaspoon Oyster Sauce
- 3 Tablespoon Chili Garlic Sauce or as desired
- 1 teaspoon White Pepper
- 1/2 teaspoon Sugar if desired

Instructions
- Marinate Chicken for half hour with given ingredients in "For Marination" section

- Heat 1/4 cup oil in a pan and fry marinated chicken over medium high heat till done and take it out


- In same pan, fry cashews and vegetables mentioned in "For vegetables" section for one minute over high heat and take them out

- In same pan heat 1 teaspoon of sesame oil, fry garlic and ginger in it and add all rest of ingredients mentioned in "For Gravy section". Add little water if you are using chicken cube


- Add fried chicken and vegetables and cook for a while

- Adjust salt and spice level according to your taste
- Serve with fried rice
