Add sugar gradually while beating till all is mixed. Add lemon zest and vanilla essence during this step
Add flour and pinch of salt and mix with your hands
Pour the mixture in prepared pan and tap it to release the air bubbles
Bake it at 180 degrees for 15-20 minutes according to your oven or till the pick comes out clean of the sponge
On a damp cloth, sprinkle powder sugar and invert prepared sponge on it
Roll the sponge in the cloth while it is warm as shown in picture
Keep it on side and let it cool while you prepare the filling
For Fillings
In a pan mix all the ingredients mentioned in “For Fillings” section and cook it over low heat till it thickens according to required consistency and let it cool.
You may add 1/2 cup cream to the filling to make it more creamy after the mixture cools down
Preparation
Unroll the sponge and spread filling over it and roll it again
You may also dress the top with the left over fillings or leave it as it is
