When mixture comes to boil take it off from the heat and add 1/2 cup flour
Mix it thoroughly, return it to the flame and cook a little till flour is no more stuck to the pan and form a ball
Transfer it to a bowl and allow it to cool till it is little warm
Add 1 egg,thyme,black pepper and pinch salt, beat the mixture till it mix well
Add second egg and again beat well till the mixture is smooth
Add cheese to the mixture and fold it slightly with spoon
Grease your muffin pan and scoop the mixture in to the pans and top each of them with shredded cheese
Bake in preheated oven at 200 degree celsius for 10 minutes, lower the temperature to 150 degrees and bake for another 2 to 5 minutes till the puffs are golden.
At this stage slightly open the door of the oven so that the puffs don’t become flat due to sudden temperature difference. Take them out and serve hot with your desired sauce.
