Remove the transparent covering of the boiled chick peas
Roast sesame seeds over low heat till slightly brown. Let it cool
Roast cumin seeds
Grind roasted sesame and cumin seeds
In chopper add ground sesame seeds in 3 Tablespoons of olive oil and blend
Add lemon juice and continue blending. Add garlic and cumin and add 3 Tablespoons olive oil more.
Add chickpeas and blend to paste
Chill the chickpeas water with ice cubes
Add this water to the chickpeas little by little while blending. Adjust the amount of water until the texture of the mixture is that of icing level whipped cream.
Add salt, pepper and paprika. Adjust flavors
Take the hummus out in a serving bowl, drizzle olive oil, and top it with some olives. Sprinkle paprika on top
