Chicken Patties/Pie
As we all know, making puff pastry takes lots of refrigeration and folding, you have to make the puff pastry a day before you want to make the patties/pie. However, don’t let that frighten you. Its not much effort at all 🙂 Just deal with the folding and refrigeration between your usual chores 🙂

Making Puff Pastry
  1. Melt Ghee/Butter in microwave and let it cool. Refrigerate it for 4 – 5 hours till its well firm again.
  2. Knead flour well with salt and water into a comparatively hard and smooth dough. Dont make it soft.
  3. Cover it and refrigerate it as well.
  5. Once the refrigeration period is over, roll out the dough into a rectangle shape. If your dough is smooth, you wont need any flour.
  6. Press the refrigerated ghee/butter in your hands to squeeze out any moisture. At this point, you have two options, either use the entire butter/ghee or divide it into 3 equal portions. Spread it all on dough or use 1/3rd of butter and spread it on dough (depending on the option you selected).
  7. Fold the rectangle into a smaller rectangle as shown in the following photos by placing ghee/butter between the folds
  12. Place it in a bowl, cover it and refrigerate it for 1 hour
  13. After 1 hour, roll it out again and make it into a smaller rectangle again using the instructions given above (using the left over butter if you chose to divide the butter), Refrigerate again for 1 hour.
  14. Repeat this process once or twice more. The more you repeat this process, the more folds you will get when the dough rises when baked. Fold it and refrigerate it overnight.
Making the Filling
  1. Cook chicken with 2 cups of water till 1 cup of stock is left
  2. Separate chicken from bones
  3. Heat butter with flour. And add chicken stock
  5. Add the chicken pieces as well and cook till its well thickened
  6. Add black pepper and salt.
Chicken Patties
  1. Roll out the puff pastry dough aprox 1/4 inch thick
  2. Cut into the desired shape. Two for each pattern so that they can go on top of each other
  3. Place filling over one and cover it with other. Press and seal edges properly
  5. Brush it with well beaten egg and milk
  6. Place them over greased oven tray and bake at 180 Degrees C for 20 – 25 minutes till dont
Chicken Pie
  1. Roll out the dough and cut it according to the size of your dish
  2. Adjust it in the dish
  3. Place the filling in it. Top with pizza sauce and cheese if you desire. You can sprinkle thyme or oregano on top
  4. Bake for 20 – 25 minutes at 180 degree C
