Marinate Chicken in ingredients mentioned in “For Chicken” sections for 10 to 15 minutes
Heat 2 to 4 Tablespoons oil and cook the marinated chicken over high heat for 2 to 3 minutes till slightly golden, take out chicken in a bowl and don’t discard the remaining oil
Boil Penne Pasta in water with 2 tablespoon vinegar, 1 Tablespoon salt and 2 tablespoon oil till it is half done and till stiff. Drain out and run cold water over heat so that keeps separated
Heat left over oil, add more if required and fry the strained pasta a little. Add 1 teaspoon thyme and basil while frying it
Heat 2 tablespoon of butter, fry garlic and onion a little and add cream cheese to it
If you can’t find cream cheese in market then you can make it at home. Heat two packs (400 ml) of cream. Add 1/2 cup of yoghurt to it. Temperature should be such that whole mixture should be warm enough for fermentation. Let it rest for 3 to 4 hours till it turns into curd. Hang this curd in muslin cloth over night.
Add 1/2 cup milk, 2 chicken cubes and cook till the cream cheese dissolve
Add shredded cheddar cheese and cream, cook till cheese dissolves, add black pepper, thyme and oregano, chopped mushrooms and few chopped basil leaves Adjust the taste accordingly
Add Penne Pasta, cooked chicken and cook a little
At this stage if you want to make a cheesy crust over it, spread shredded mozzarella cheese over it and bake till the cheese melts
