Szechuan Chicken
Ingredients
For Chicken Marination
- 750 gms Chicken Boneless
- 2 Tablespoon Corn Flour
- 1 Egg
- 1/2 Teaspoon Black Pepper
- 1/2 Teaspoon White Pepper
- 1 Tablespoon Soy Sauce
- 1 Teaspoon Salt
- 1/2 Teaspoon Salt
Vegetables
- 1 Onion small (Cut in cubes)
- 1 Capsicum Cut in cubes
- 1/2 Cup Spring Onions Chopped
For Gravy
- 20 Red chillies Whole
- 1.5 Teaspoon garlic Minced
- 1/2 Teaspoon Ginger Minced
- 2 Chicken Cubes
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Vinegar
- 2 Tablespoon Ketchup
- 1 Teaspoon Chineese Salt
- Salt According to Taste
- 1 Teaspoon White Pepper
- 1 Tablespoon Chilli Garlic Sauce

Instructions
- Soak the red chillies in water for 3 - 4 hours. Take out its seeds.

- Chop them into a smooth paste

- Mix all the ingredients of marination section. Set aside for 15 - 20 minutes

- Fry the marinated chicken over high heat for 2 - 3 minutes so that it remains juicy and do not become crisp and dry


- Heat 2 Tablespoon oil and stir fry the vegetables a little.

- In a separate pan, heat 2 tablespoon oil, fry garlic and ginger a little.

- Add in the chopped red chillies

- Add half cup water, soy sauce, chicken cubes, salt, chilli garlic sauce, white pepper, chineese salt, ketchup and vinegar. Adjust the flavors according to your taste

- Cook till all ingredients are mixed

- Add in fried chicken, and toss in the vegetables

- Serve hot with rice 🙂
