Polo Chicken
Ingredients
For Marination
- 3 Chicken Breasts 800 gm approximately
- 1 teaspoon Soda
- 2 Tablespoon Vinegar
For Coating
- 3 Tablespoon Flour
- 2 Tablespoon Soy Sauce
- 2 Tablespoon Worcestershire Sauce
- 1 Tablespoon Chili Sauce
- 1 teaspoon Black Pepper
- 1/2 teaspoon Thyme
- 1/2 teaspoon Oregano
- 1/2 Cup Bread Crums Or Crushed cornflakes or flour ( for outer coating)
For Filling
- 1/2 Cup Spinach Boiled and drained well
- 1 Tablespoon olive oil
- 1 teaspoon Garlic Paste
- 1/2 teaspoon Ginger Paste
- 2 Tablespoon Green Onions
- 1 Chicken Cube
- 1 teaspoon Crush Chilles
- 1 Green Chilies Crushed
- 1 Tablespoon Lemon Juice
- 1 teaspoon Black Pepper
- 100 gm Cheddar Cheese Shredded

Instructions
- You can use whole chicken breast or you can use thin slices of breast. If you are using whole breast than hollow it with the help of knife as shown in picture. Or you can make thin large slices splitting the breast like a book.
- Marinate Chicken in soda and vinegar for 15 - 20 minutes then wash it and strain it well
- Prepare filling by heating one Tablespoon olive oil and add garlic, ginger and green onion. Saute a little
- Add spinach to it and fry it for 2 to 3 minutes
- Add all spices mentioned in ingredients "For Filling" except cheese and cook till it is dry well
- Add cheese and toss a little
- If you take whole breasts then fill it with filling as shown in picture and close the opening with tooth picks
- If you are using slices then place a slice between two plastic bags. Tap them little carefully. If it tears then gather them carefully
- Place filling in middle and wrap it. Close it with help of tooth picks
- Mix all ingredients of coating except bread crum for outer coating
- Fold each filled breast in flour mixture and coat it with bread crums or cornflakes or flour
- Fry a little on the both side for minute each
- Bake in preheated oven at 180 degrees for 25 minutes
- Prepare topping sauce by heating 1 tablespoon butter, 1 Tablespoon Flour and garlic a little
- Remove from heat, add milk and mix well. Cook till thick
- Add black pepper, thyme, oregano, olives at the end add cheese and remove from heat
- When Breasts are done, cut them into pieces
- Top with the prepared sauce and serve with stir fried veges

You are supposed to eat it with what? Roti or rice?

It is supposed to be eaten as it is along with fried veges with fork but you can use Rice as a side as well
