Ingredients
For Sponge x 2 (We baked 2 separate cakes. These ingredients are for each cake)

Instructions
  1. Separate egg yolks and egg whites
  2. Beat egg whites till they are stiff
  3. Beat egg yolks till they are light in color
  4. Add yolks to the beaten egg whites and beat again
  5. Add sugar gradually while beating till all is mixed. Add vanilla essence during this step
  6. Add flour and pinch of salt and mix with your hands
  7. This is how the batter should look
  8. Grease your baking dish with butter. Line it with butter paper so that taking it out is easier. Make sure that it is of such size that the batter should cover half of the dish. We used 11 by 11 inch
  9. Pour the mixture in
  10. Tap it to release air bubbles
  11. Bake it at 180 degrees for 15-20 minutes according to your oven or till the pick comes out clean of the sponge
  12. Repeat the same to bake another cake
  13. Add lemon juice in the cream and mix it and place in refrigerator to chill
  14. Then beat it with sugar, vanilla essence till it thickens to your required consistency
  15. Moisten each cake with the fresh orange juice
  16. Crush the butter puffs roughly with your hands. Leave one portion for upper half decoration
  17. Spread the cream over one of the moistened cake
  18. Spread the crushed butter puff over it
  19. Place the other half over the top
  20. Moisten it with orange juice
  21. Spread the cream over it. You can be as generous as you want at this point 🙂
  22. Spread the other half of puff pastry on top and decorate it as you please. Sprinkle some icing sugar on top. And your cake is ready
