Tom Yum Soup
Ingredients
For Stock
- 1/2 Kg Chicken with bones meant for stock purpose
- 5 cloves garlic
- 1 Piece Ginger
- 5 Lemon Grass If fresh is not available, dried can also be used
For Soup
- 10 Red Chilies
- 100 gm Chicken Boneless and small pieces
- 2 Chicken Cube
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Oyster Sauce
- 1 teaspoon Chinese Salt
- 1/4 Cup Lemon Juice
- 5-6 Lime leaves (Kaffir) you can also use lemon leaves and lemon rind instead
- 1 Tomato Chopped into small pieces
- 1 Onion Chopped into small pieces
- 1/2 Cup Mushrooms Diced
- 1/2 Cup Coconut Milk (Optional)
Servings:
Instructions
- Make stock with five cups of water using ingredients mentioned in "For Stock" section
- Strain the stock
- Soak red chilies in water for 1 hour, strain and blend them well
- In a pan cook strained stock with boneless chicken pieces, chicken cubes and lime leaves and cook till chicken is tender
- Add onions, mushrooms and tomatoes
- Add the blended chili paste according to your desired spice level
- Add Soy sauce, oyster sauce and Chinese salt
- Now add Lemon juice, adjust the spice level accordingly
- Add 1/2 cup coconut milk if desired and cook a little
