  2. Now gather the ends into center and merge them and shape into a flat circle again.
  3. Heat your tawa/pan well and brush it with butter Roll out the nan comparatively think than a normal chapatti
  4. Remove the tawa from the flame (this is a precautionary measure so that your hands do not get hurt) Place the rolled out Nan on the tawa.
  5. At this stage, if you desire to top your Nan with sesame seeds, pour out desired amount of sesame seeds on Nan and pour 1 - 2 tablespoons of gravy on it. Carefully press the sesame into the nan gently and make sure that you do not damage the Nan in the process
  6. Now put the pan back on the flame. Turn heat to medium low at this stage. Nan will rise. With patience let this side cook fully.
  7. When you see that the upper surface of nan is firm and gravy is dried properly and the lower surface is cooked well turn the side.
  8. At this stage, you have two options. Either you transfer the Nan in your preheated oven at high heat on a grill rack so that the cooked surface faces up. Bake till its golden
  9. The second and easy option is to change the side and continue cooking on tawa. Although taste of both differs, but its equally good.
  10. When Nan is ready, brush it with butter.
